Does anyone have accurate information from the inside of Agave Nectar production?
From what i've read, the plants are harvested and their big hearts cut out to get the sap out, which would effectively kill the plant. Given the explosive popularity of this sweetener, and the fact that it's now available in Trader Joes (and probably soon in mainstream markets), i have bot concerns and doubts about its sustainability.
My friend disbelieves that most agave nectar is pure. He doesn't think it's possible that there are enough agave plants in America to produce such an enormous quantity of nectar. I'm inclined to believe what i read on labels, naive as that may be, but i also suspect something fishy is going on.
I would love to hear from anyone who knows someone in the agave business, or anyone who has visited an agave farm, or otherwise has personal knowledge of how it's produced and distributed in the US.
